Pork, Potatoes & Sauerkraut

This is a quick and easy one pan meal.  If you like sauerkraut, you will love this!

1 large can or bag of sauerkraut

4/5 Idaho potatoes peeled and sliced into thin slices

4 boneless pork chops or thick pork loins

Slice potatoes and put them on the bottom of a large non-stick pan.  Add the sauerkraut on top and spread it evenly. Place your pork on top of the kraut and salt and pepper.  Take foil and cover the whole top tightly.  Cook it on MEDIUM heat on the stove top for around 45 minutes.  All the flavors meld together and the meat is very moist. So simple!
