Quick Chicken Soup Lunch


This is one of our favorite cool weather lunches.  The babe likes it (so easy to feed herself), the toddler likes it, and my husband likes it!

Feeds 4 (It feeds us with about 2 second helpings for the adults left over)

1 box of chicken stock (we use Simple Organic Chicken Stock from Kroger)

4-5  large carrots, prepared for bite-size

1-2 chicken breasts

soup noodles (right now we like the “mini bow-tie” type

In a small skillet cook your well seasoned whole chicken breast until just done. Let it rest and then cut it up in bite size peices.  Take your cut carrots and put them in a medium soup pot with a bit of filtered water.  Let them soften some in the pot on med-high with the lid on.  When the carrots start to absorb the water add some of your chicken broth to cover.  Let them continue to soften the the broth.  Once your carrots are mostly soft, add the chicken and the rest of the broth.  Once at a boil, add the noodles and cook until the noodles are soft.  Add salt and pepper to taste. Enjoy.
